Get Sneaky with Your Veggies: Delicious Hidden Veggie Pasta for the Whole Family!

Looking for a delicious and healthy recipe that the whole family can enjoy? This pasta dish is packed with hidden veggies and is sure to be a hit with even the pickiest eaters! Plus, it’s a great way to get your kids involved in the cooking process and teach them about healthy eating habits.

This pasta dish is loaded with nutritious ingredients that are important for your family’s health. Tomatoes are rich in vitamin C and lycopene, a powerful antioxidant that can help protect against certain types of cancer. Spinach is high in iron, calcium, and vitamin K, which is important for healthy bones and blood clotting. And mushrooms are a good source of protein, fibre, and B vitamins, which can help support a healthy immune system.

Kids will never know this is packed full of nutrient rich spinach!

To make this dish even more exciting, get your kids involved in the cooking process! They can help chop the veggies (with supervision, of course) and stir the pot while the pasta cooks. Cooking together is not only fun, but it can also help your children develop a love for healthy foods that will last a lifetime.

And the best part? The hidden veggies in this dish are so finely chopped that even the pickiest of eaters won’t be able to tell that they’re there. So if you’re looking for a way to sneak some extra nutrition into your family’s meals, this pasta dish is the perfect solution.

To make this recipe, start by cooking your favourite pasta according to the package instructions. While the pasta cooks, sauté some finely chopped mushrooms and garlic in olive oil until the mushrooms are golden brown. Then add a can of diced tomatoes, a handful of spinach, and some Italian seasoning to the pan, and simmer until the spinach is wilted and the sauce is heated through.

Good for you mushrooms!

Once the pasta is cooked, toss it with the veggie-packed sauce and top with some freshly grated Parmesan cheese. Your family will love the delicious flavour of this pasta dish, and you’ll love the peace of mind that comes with knowing that you’re serving them a nutritious meal that’s also fun to make together.

  • 450g of your favourite pasta
  • 2 tablespoons of olive oil
  • 225g of sliced mushrooms
  • 2 cloves of garlic, minced
  • 1 can of diced tomatoes (400g)
  • 200g of fresh spinach, chopped
  • 1 tablespoon of Italian seasoning
  • Salt and pepper, to taste
  • Grated Parmesan cheese, for serving

Note: The can of diced tomatoes listed in the ingredients is roughly equivalent to a standard UK can of chopped tomatoes.

  1. Cook the pasta according to the package instructions. Drain and set aside.
  2. While the pasta cooks, heat the olive oil in a large frying pan over medium-high heat. Add the mushrooms and garlic and sauté for 5-7 minutes, or until the mushrooms are golden brown.
  3. Add the can of diced tomatoes (with the juice), chopped spinach, and Italian seasoning to the skillet. Stir to combine and bring the sauce to a simmer. Let it cook for 5-7 minutes, or until the spinach is wilted and the sauce is heated through.
  4. Taste the sauce and season with salt and pepper as needed.
  5. Add the cooked pasta to the skillet with the sauce and toss to combine.
  6. Serve the pasta hot with some freshly grated Parmesan cheese on top.

This recipe should take about 30 minutes to make from start to finish and serves 4-6 people.

This pasta recipe is not only easy to make, but you can easily tweak it to fit your family’s preferences. If your kids are not big fans of mushrooms, you can easily substitute them with some other veggies like bell peppers or courgette. And if you want to add some meat, the recipe works really well with protein like cooked chicken or turkey meatballs to make the dish more filling.

By making this pasta dish at home, you can control the quality of the ingredients and ensure that your family is getting the nutrients they need without any added preservatives or artificial flavors. So why not give it a try and see how much your family will love it? We bet this will soon become a family fave!
