  • 1 tablespoon of Italian seasoning
  • Salt and pepper, to taste
  • Grated Parmesan cheese, for serving

Note: The can of diced tomatoes listed in the ingredients is roughly equivalent to a standard UK can of chopped tomatoes.

Instructions:

  1. Cook the pasta according to the package instructions. Drain and set aside.
  2. While the pasta cooks, heat the olive oil in a large frying pan over medium-high heat. Add the mushrooms and garlic and sauté for 5-7 minutes, or until the mushrooms are golden brown.
  3. Add the can of diced tomatoes (with the juice), chopped spinach, and Italian seasoning to the skillet. Stir to combine and bring the sauce to a simmer. Let it cook for 5-7 minutes, or until the spinach is wilted and the sauce is heated through.
  4. Taste the sauce and season with salt and pepper as needed.
  5. Add the cooked pasta to the skillet with the sauce and toss to combine.
  6. Serve the pasta hot with some freshly grated Parmesan cheese on top.
