Creamy Garlic Chicken

Ingredients:

  • 4 chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 teaspoon Dijon mustard
  • 4 cloves garlic, minced
  • 250ml chicken stock
  • 150ml double cream
  • large handful of grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped

Instructions:

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat the olive oil in a large frying pan or skillet over medium-high heat. Add the chicken breasts and cook for 6-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same frying pan, add the butter and garlic and sauté for 1-2 minutes until fragrant.
  4. Add the chicken broth to the frying pan and bring to a simmer, scraping up any brown bits from the bottom of the pan. Let the broth reduce for 3-4 minutes. Add the teaspoon of Dijon mustard.
  5. Stir in the double cream and Parmesan cheese, and cook for 2-3 minutes until the sauce has thickened.
  6. Add the chicken back to the skillet, spoon the sauce over the top, and sprinkle with fresh parsley.
  7. Serve with mash and vegetables, or rice, or pasta!

This recipe should serve 4 people and takes approximately 25-30 minutes to make from start to finish.
